Chef Renee Falazar, owner of Francesco’s Italian Ristorante in Phillipsburg, trained under Chef Francesco Soria of Italy, for whom he named his restaurant. Chef sources the pig for the porchetta from The Pastoral Pig in Flanders where all animals are free-range raised.
