Rosita Wine Soaked Cake

Weather this time of year always makes me feel ready for a picnic.  No picnic is complete without a sweet and easy to make cake!  Here's one of my favorites.

1 box yellow cake mix
1 (3oz) package instant vanilla pudding mix
¾ cup vegetable oil
½ cup water
¾ cup Rosita wine
4 eggs

½ cup white sugar
¼ cup butter
½ cup Rosita wine
1 tbsp confectioner’s sugar
¼ teaspoon red food color

Preheat oven to 325 degrees F.  Spray a Bundt pan with vegetable oil spray and dust lightly with flour.
Whisk cake mix, pudding mix and sugar in a bowl.  In another bowl mix vegetable oil, water, ½ cup of wine and eggs.  Then mix into the dry ingredients – 1-2 minutes with beater of 50+ strokes by hand.  Bake in preheated oven until toothpick inserted in the center of cake comes out clean – about an hour.  Remove from heat. 

Pour the Rosita into a saucepan and simmer over medium heat until reduced to half (1/4 cup).  Add the sugar and butter and continue simmering, stirring constantly, until the sugar is dissolved – 3-5 minutes.  Spoon the warm glaze over the still warm cake.  Poke a few small holes to let the glaze seep in. Invert the cake onto a cake plate and spoon the remaining glaze over the top of the cake.  Allow it to absorb all of the glaze.  Before serving, dust with confectioner’s sugar.

Serve with a glass of Rosita.  Perfect, delicate dessert!
